Roasted Onion Guacamole

Best guacamole... EVER. You're welcome! ;)

Ingredients
1 large purple onion, chopped
2 garlic cloves, chopped
2 Tbsp balsamic vinegar
1 Tbsp olive oil
4 small California avocados, peeled
1 plum tomato, chopped
1 Tbsp lime juice
½ tsp salt

Directions
Toss together first 4 ingredients. Place in an aluminum foil-lined baking pan. Bake at 425° for 25 to 30 minutes or until lightly browned, stirring once. Cool.

Mash avocados in a medium bowl. Stir in onion mixture, tomato, lime juice and salt. Chill 1 hour. Serve with tortilla chips.
